Mr. Pete's Stuffed Dirty Chicken Breast

Mr. Pete has created some wonderful recipes; and more recently, he has introduced his pre-packaged meals. Well, there is only so many times you can eat Jambalaya and Dirty Rice in any given week. lol With such an awesome flavor, I just knew these spices could create some amazing dishes aside from their intended purpose. And boy, was I right!

Behold Mr. Pete's Stuffed Chicken Breast! Yum! The family all enjoyed this fabulous creation, and yours will too!



This recipe was so easy! Follow below.

Ingredients:

5 boneless, skinless chicken breast
1 large bellpepper, diced
1 to 2 large onions, diced
1 stalk celery, diced
1 tablespoon minced garlic
1 tablespoon Mr. Pete's Cajun Seasoning

Stuffing ingredients:

1- 8 oz. package of Mr. Pete's Dirty Rice Mix
1 lb. ground beef
1 tablespoon cooking oil
2 1/2 cups water

Directions:

Prepare Mr. Pete's Dirty Rice Mix according to package directions.


While preparing the dirty rice, we prepped the chicken breast. First, you will want to spray non-stick spray or coat your pan with butter. Rinse the chicken breasts well under cool water. Using a sharp knife, you will want to butterfly the breasts as pictured below. Sprinkle half of the Mr. Pete's Cajun Seasoning on the inside of the breasts, saving the other half for the outside.


Dice your bellpepper, onion(s), and celery. Mix together in bowl. This is known as Cajun trinity, which is well known in southern cooking. Add your garlic to the mix. Sprinkle the Cajun trinity mixture on top of seasoned breasts of chicken.


Pop your prepared chicken breasts as shown above in the oven at 275 degrees for 20 minutes. When the 20 minutes is up, your dirty rice mix should be completed. Remove chicken breasts from oven. Spoon one large scoop of Mr. Pete's dirty rice mix into each breast making sure not to overfill them, and fold the breast in half. Sprinkle the remaining Mr. Pete's Cajun seasoning on the top of breasts.


Increase your oven temperature to 350 degrees and place chicken breasts back into the oven. Cook for another 45 minutes. Remove from oven and serve with your favorite side dishes! We had plenty extra rice dressing. You can either serve the rest the next day, or do as we did! We served it on the side, along with some sweet petit' pois!
